Best Chocolate Cookies Ever!


 

Yesterday afternoon I was seriously craving something chocolatey but didn't want to make cake. So I looked around on Pinterest and saw a recipe for Chocolate Brownie Cookies. I didn't have the exact ingredients, but I went for it anyway! And they turned out awesome!!! So, I thought I would share them here with you today.
I started with this recipe here from "Pure and Yummy." Since I didn't have any of the bakers unsweetened chocolate, I just substituted the 4 oz of unsweetened chocolate with 1/2 C of dark chocolate chips. Next time I think I will use all dark chocolate and make it even more yummy and irresistible.

Brownie Cookies


½ cup butter
4 (1 ounce) squares unsweetened chocolate, chopped
3 cups (18 ounces) semisweet chocolate chips, divided
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
4 large eggs
1 ½ cups sugar
2 teaspoons vanilla extract
Combine butter, unsweetened chocolate, and 1 ½ cups chocolate chips in a large heavy saucepan. Cook over low heat, stirring constantly, until butter and chocolate melt; let cool.
Combine flour, baking powder, and salt in a small bowl, set aside.
Beat eggs, sugar and vanilla at medium speed with an electric mixer. Gradually add dry ingredients to egg mixture, beating well. Then add the chocolate mixture and beat well. Stir in remaining 1 ½ cups chocolate chips.
Scoop dough onto baking sheets 1 inch appart. Bake at 350 degrees for 10 minutes. Cool slightly on baking sheets; remove to wire racks to cool completely.

Pumpkin Snickerdoodles

I Finally got around to making these yummy cookies. They were not "pumpkinny" enough for me. So I added a pumpkin glaze. It's good, but I think I will rework the recipe and add more pumpkin next time.
I'll post when it's up to my standards :)

Oreo Buddies

I couldn't help myself! I had another box of Chex sitting in my pantry just waiting to be consumed. And since no one in my house would ever think to eat Chex as a "ceral," I decided it needed to be made into a new "Buddie Mix." And...I had Oreos left over from the Oreo Cupakes I made the other day, so... You guessed it - OrEO BuDdiEs!!! Yum!

OrEO BuDdiEs

Ingredients:
9 Cups Rice Chex® cereal
1 1/4 C white vanilla baking chips
1/4 C butter or margarine
1 tsp vanilla
1/2 C crushed Oreo crumbs (6 cookies)
1 1/2 C powdered sugar
12 Oreo cookies crushed into small pieces

Directions:
Pour Chex into a large bowl; set aside. Mix butter and vanilla together; melt in micro 20 seconds. Add chips to butter and mix. Heat 1 minute more, stir, and heat another 30 seconds. Stir until smooth. Pour mixture over cereal, stirring until evenly coated. Immediately add Oreo crumbs; toss to cover. Add powdered sugar and toss. Finally add the Oreo pieces and toss again.

Cake Batter Buddies

I made this super yummy new recipe! I found it on one of my favorite sites, The Girl who Ate Everything. I changed her recipe a bit because of what was available to me.

Cake Batter Buddies

Ingredients:
1 box of Chex
5 cubes (10 oz) of white candy bark
1 C Confetti cake mix
1/4 C Powdered Sugar
1/4-1/2 C sprinkles

Recipe:
Follow the directions for melting the white bark. In the meantime, Pour the box of Chex in a large bowl. Then pour the melted candy bark over the ceral and toss to coat. Add the sprinkles immediately so they will stick. Then toss in the cake mix ( I purchased at Dollar Tree! enough for two batches) and powdered sugar and coat well. Some people use a plastic bag, but I have a big bowl that I use-whatever works!

CaKe BaTteR CooKiEs

So, as you know I bake everything from scratch. Everything! Well, almost everything. I must admit that I do use a cake mix when I make my mom's Strawberry Trifle. I have tried my own yellow cake and it is just not the same. And, I LOVE Strawberry Trifle so I still use Duncan Hines, Golden Yellow Butter Cake mix.
But, when I read my email from Java Cupcake yesterday I couldn't resist. She too says she does not use cake mixes but would make an exception for this recipe she saw for CaKe BaTteR CooKiEs. You can read her story here.
Curiosity got the best of me and so I grabbed a yellow cake mix (Duncan Hines of course!) and whipped up a batch of CaKe BaTteR CooKiEs. 


They were so yummy!

Baking this weekend


This weekend I made cupcakes and cake for a 30th Surprise Party and a Baby Shower. Here are a few pictures.
